Our Eye of the Partridge is made using the "Pressurage direct" method - The most traditional way to make rosé wine and, purists would argue, the best. Our Estate Pinot Noir fruit was hand selected and harvested early with a lower brix to highlight a crisp malic acid. This produces a more Old-world rosé feel that balances fruit, minerality, round mouth feel with a crisp finish. A nose of soft poached pear and summer rain draws you in. The first sip is reminiscent of the first picked watermelon of summer, crisp and refreshing without being too sweet. Pair this with a goat cheese & pear salad, grilled veggie kebabs, or salmon teriyaki.
